Ingredients:
1 (4 lb) hen
1 tablespoon salt
2 quarts water
1/2 pound ham, diced
1 cup celery, diced
1 tablespoon bacon fat or butter
1 bay leaf
2 tablespoons chopped parsley
1/2 teaspoon thyme
3 cups okra, sliced & boiled
10 minutes, or 1 pkg frozen
2 tablespoons file powder
5 cups hot cooked rice
Directions:
Cut up the hen and boil in salted water until tender, about 2 hours. Remove chicken;
set broth aside.
Cut chicken into large bite-sized pieces.
Saute the ham and
celery in fat or butter; add the bay leaf, parsley, and thyme. Cook a few minutes.
Add this and okra to the chicken broth.
You need about 6 cups of broth.
Simmer
10 minutes.
Add the chicken and reheat.
Just before serving, add the file powder.
Serve on rice in soup plates.
