Low Carb Baked Cod Recipe
Ingredients:
1 kg cod
4 tbsp lemon juice -- 2 lemons
1 lg oranges -- sliced
1 lg tomato -- sliced
1 lg onions -- sliced
250 g mushrooms -- (8 oz)
1/2 tsp paprika
1/2 tsp thyme
1/4 tsp freshly ground black pepper
3 tbsp dry white wine
lemon wedges
Directions:
NOTE: No salt to be used when cooking in a microwave.
It can be cooked in a microwave
oven or an ordinary oven.
Into a glass baking dish, place the fish which has
been freshly washed and patted dry with paper towels. Squeeze lemon juice over
fish. Arrange alternate slices of oranges and tomatoes over top of fish, then
spread onion rings on top again.
Arrange remainder of onions and the mushrooms
around the sides of fish.
Sprinkle seasonings over fish and surroundings. Sprinkle wine over all ingredients.
Cook 5 to 7 minutes on high setting of microwave, remove from oven and let stand,
covered, for 3 minutes. Alternatively, cook in an ordinary moderate oven for
about 30 minutes. Serve with fluffy rice and lemon wedges.
