Simply Italian!
Italian food, for the most part, is simple food. From the golden hills of Tuscany to the blue waters of the Adriatic Sea, each area in Italy has its food traditions, and nearly all of them come from what has traditionally been available in that region. In the agriculturally rich North, for instance, the pasta is made with rich egg yolks and the sauces incorporate butter. In the arid South, pasta is made with water, and is therefore harder and chewier; it is made into small shapes and used with stronger sauces, using more tomatoes and olive oil.
This tradition of working with fresh pastas, artisan breads and fresh seafood and vegetables allows the dishes of Italy to focus on flavorful ingredients rather than complex techniques. With a few of these simple, age-old ideas, you can make authentic Italian dishes a delicious part of your everyday cooking.
